Combine water, sugar and butter in a saucepan over medium heat and turn down when it comes to the boil
Pour all the flour into the saucepan quickly and stir immediately. Keep on stirring, making sure it doesn't stick to the pan. Stir until it becomes one solid mass. Transfer to a bowl and let it cool down to room temperature
When the dough reaches room temperature, add eggs one at a time and mix
Add baking power and mix
Let the mixture rest for an hour
Heat oil for deep frying
When oil is very hot take a spoonful of the mixture and with the help of another spoon, push the mixture into the oil. Fry six or eight fritters at the one time
Fry until the sfingi crack open and are a deep golden colour. Drain on paper towell
Just before serving, mix cinnamon and sugar together in a bowl and coat each sfingi before arranging on a plate
Serve hot or warm with honey
