Wattleseed Biscuits (a wonderful partner for cheese)
Spending a week at Uhluru included a walk around the gardens of Ayers Rock Resort and discovering that almost every shrub and tree had a FOOD or medicinal purpose.
I particularly enjoyed watching, and tasting, Wattleseed Biscuits being made. These little snack size biscuits are ideal when accompanied by a variety of cheeses (instead of the usual shop crackers).
INGREDIENTS
• 125g unsalted butter
• 1/2 cup grated cheddar cheese
• 1/2 cup grated parmesan
• 150g (1 cup) plain flour
• 2 teaspoons wattle seeds
METHOD
Place all ingredients in a food processor and process to combine. Remove dough, divide in half then roll each into a log. Roll in baking paper then refrigerate for 30 minutes. (You can freeze the dough at this stage.)
Preheat the oven to 180°C.
Cut dough into 1/2cm slices, place on trays lined with baking paper and bake for 12-15 minutes.
Set aside to cool for 15 minute and serve to your visitors with a selection of (your) favourite cheeses.
Particularly delicious with a glass of Sauvignon Blanc!
