With Salmon being my favourite food of all time, it was really easy to enjoy a trip through Alaska, This salmon chowder was particularly delicious and I enjoyed it many times in Denali (after a hard day searching for grizzlies), Fairbanks, Anchorage and many more magic places.
Alaskan Salmon Chowder
A hearty soup perfect for those cold days!
Enjoy with a full flavoured glass of Chardonnay!
Servings 4 Large servings
Ingredients
- 1/2 cup Chopped onion
- 1/2 cup Chopped celery
- 1/4 cup Chopped green capsicum
- 1 Garlic clove crushed
- 500 mls Chicken stock
- 2 cups Potatos peeled and diced
- 1 cup Carrots sliced
- 1 tsp Seasoned salt (optional)
- Good pinch of pepper
- 1 tsp Dill chopped
- 1 small Zuchnin chopped
- 400 mls Cream-style corn (canned)
- 400 mls Evaporated milk (canned)
- 2 cups Salmon cooked (Or 2 x 200 mls cans salmon drained and bones removed)
Instructions

In a saucepan, cook onion, celery, green capsicum and garlic in 1/4 cup stock until tender

Add potatoes, carrots, seasoned salt and pepper, dill and remaining stock

Cover and simmer for 20 minutes or until vegetables are tender

Add zucchini and simmer for 5 minutes

Add cord, milk and salmon and hat through
